Carrot and Coriander Soup Recipe  
 

Cooking Ingredients

Carrots (500g)

x1 Onion

Garlic Clove (x1)

Buch of Coriander

Veg Stock Cube (x1)

Salt & Pepper

Cumin (x1 tsp)

Oil (to fry)

Serves 3 | Prep time: 15m Cooking time: 10m | 160 calories & 6g fat p/serving

Here’s a great traditional carrot soup recipe - Carrot and Coriander Soup.

Roughly chop the Onion and Garlic and fry for 5 minutes in a saucepan.

Roughly chop the Carrots and add to the pan with the Coriander, Stock Cube and Cumin. Add water to just cover the mixture and simmer for 10 minutes.

Blitz the mixture in a food processor/hand blender then add Salt & Pepper to season.

Add some water if the soup is too thick, then it’s ready. Also works great as a vegan soup or vegetarian soup.
